I want to introduce Bok Choy ( with recipes for Spicy Salad and Stir -Frying )

 


After Napa cabbage, I would like to introduce another amazing vegetable called Bok choy(청경채).

Personally, I love this Bok choy salad. And don't you have Napa cabbage soup I introduced last time?

It tastes even better if you add Bok choy while cooking.

In Korean expression, you say 'cool'. We eat something hot, but it feels like something is going through my stomach.... I hope you guys can feel it.

Let's find out the benefits of Bok choy that are better to know and eat.

1. Bone Health

Bok choy is rich in minerals such as iron, zinc, magnesium, and calcium. These minerals help build strong bones by improving bone density. It is also rich in vitamin K, which aids in calcium absorption.

2. Promotes circulation 

Iron deficiency can cause abnormal symptoms such as headache, dizziness, dry hair, heart palpitations, frequent fatigue, shortness of breath, and pale skin. Bok choy is rich in iron, which supplies proper oxygen to the body and promotes circulation.

3. Prevents chronic diseases

Bok choy contains sulfur, which acts as an antioxidant. It protects our body from being damaged by active oxygen and prevents chronic disease.

4. Improve eye health

Among the main components of Bok choy, carotenoids such as beta-carotene and alpha- carotene improve eye health. It pays a role in preventing macular degeneration and oxidative stress. Good for maintaining and strengthening eyesight.

5. Blood Pressure control

Potassium in Bok choy  acts as a vasodilator, relieving tension and stress in blood vessels, increasing blood flow and oxygen supply. It plays a role in maintaining the body's water balance.


* Spicy Bok Choy Salade (1 lb) - source Kimchi Roll-

Ingredient

1lb baby bok choy

1/2 onion

apple cider vinegar about 3 (adjust to taste)

red pepper powder about 1 T (adjust according to taste)

anchovy sauce 1-2 t (small t is teaspoon large T is table spoon!) 

sugar 1 T

soy sauce 1 T

1/2 t salt (adjust)

to make

1. Put all the ingredients except the bok choy into a blender and blend ( leave the sauce overnight or 3-4hours is better)

2. Wash an drain the bok choy and cut it in half lengthwise.

3. Mix with sesame seeds at the end and serve.


* Stir-fried Bok choy 

Ingredients

1 bag of bok choy,

Oil 2 1/2T 

Shrimp (or pork)  half cup

Green onion 2 strips

Sauce

Soy sauce 1 T

Oyster 2 T

Sugar 1t

Potato starch dissolved water 2 T

Sesame oil and sesame seeds, 1t 

Minced garlic 1T

To Make

1. Heat oil in a frying pan and add chopped green onion to make green onion oil.

2. Add shrimp, stir-fry, and add bok choy.

3. Add the rest of the sauce except sesame oil and sesame seed.

4. Add starch water

5. Sprinkle with sesame oil and sesame seeds at the end.
